How to Make Moi Moi


    Welcome back friends. Today we will be treating another How-to cooking tutorial and this one will teach you how to make moi moi.
    Moi moi or Moin-Moin is a Nigerian steamed bean pudding made from a mixture of washed and peeled black-eyed peas, onions and fresh ground peppers. It is a protein-rich food that is a staple in Nigeria. 
Ingredients
  • 2 cups of black eyed beans
  • 1 medium of onion
  • 2 medium sized tomato 
  • 2 fresh pepper (depending on how you want it, you can even add more if you like)
  • Boiled eggs(optional)
  • 2 tablespoonful of grounded crayfish
  • 1 teaspoonful of slat
  • Vegetable oil
  • 2 seasonings of your choice
  • Water 
Procedure
     In a boil, put in the quantity of black-eyed beans you want to use and pour water to cover the beans. Soak it overnight to get soft.
     In the morning gently rub the beans together as you wash it to remove the peelings. If you are using an already peeled beans, all you need to do is to soak it overnight to make it soft only.
     Put the cleaned beans in a blender and add a whole sized onion to taste. If you don't already have  a blender, you can order here. Also add pepper and 2 medium sized tomatoes to the mixture and blend till it becomes a smooth paste.If you have already prepared bean flour before you don't need to go through the steps above. All you have to do is add in your blended tomatoes, pepper and onion to the flour and mix into a smooth paste.
     Put the bean paste into a bowl, add vegetable oil and mix. Slice boiled egg into moderate sizes and add it into the paste. After that you can now add in your grinded crayfish and seasoning cubes to the paste then add a little amount of water to loosen the paste (be careful not to make it too light).
     Measure the beans pate into medium sized plates or cups with cover to a certain level so that it will have enough space for the bean to expand once it starts boiling. Get a clean cooking pot with water and place the covered plates or cups into the pot and cover it. Boil it for about 10 minutes until the bean paste starts to look like a baked cake. Now you can serve it with pap, garri, jollof rice, fried rice
